NORWEGIAN LEFSE

 

2 c. mashed potatoes (hot)
2 tbsp. butter
1 tbsp. milk
1 tsp. salt

Beat together; cover and chill well. Turn onto a slightly floured surface. Sprinkle with 1/2 cup flour. Knead 8-10 minutes, gradually kneading another 1/2 cup flour. Divide into 16 portions, shape into balls, roll into 6 inch circles. Roll onto rolling pin and transfer to hot greased skillet. Cook until slightly browned, turn once. Should be limp.

Lefse were used to wrap around a piece of food such as a meatball. American- Norwegians butter their lefse, sprinkle with sugar and cinnamon; roll up to eat as a type of bread.

EASY - BEGINNERS LEFSE

 

 

3 c. boiling water
2 1/3 c. canned milk
1/4 lb. butter
2 tsp. salt
1/4 c. sugar
4 c. instant potatoes
1 1/2 c. flour

Heat milk, water, butter, salt and sugar to boiling. Stir potato flakes into mixture and beat until smooth. Cool well, overnight in refrigerator is best. Divide dough in half. Add 3/4 cup flour. Roll thin and bake on lefse grill.

Vafler
(Waffles with sour cream)

1-1/3 cup flour
1/2 tsp. salt
2 T. sugar
1 tsp. vanilla extract
1/2 cup water
1 cup sour cream
1/2 cup butter
3 eggs, separated

Mix all ingredients, except egg whites, until you have a smooth batter. Let rest 25-30 minutes. Beat egg whites until they form peaks, then gently fold them into the batter. Bake in Norwegian waffle iron. (Lightly butter surface before first waffle only.) Drop batter by tablespoonful onto iron, and close tightly. Bake until golden.

Place on cake racks to cool. Serve with jam or sprinkle with powdered sugar.

 

“Kvæfjord-Cake”:

Step 1 - First layer of base
5½ ounces butter
¾ cup sugar
6 egg yolks
1 teaspoon vanilla sugar
6 tablespoons milk
1 cup all-purpose flour
1½ teaspoons baking powder

Whisk the sugar and butter until smooth and pale. Fold in the other ingredients. Mix well. Spread on a 14 x 17 inch baking pan lined with baking/greaseproof paper.

Step 2 - Second layer of base (meringue)
6 egg whites
1 cup sugar

Whisk sugar and egg whites together until stiff peaks form (meringue). Spread evenly over base made in step 1. Sprinkle 4 ounces sliced almonds on top of the meringue.

Bake the two layers together at 350 degrees Fahrenheit in lower part of the oven, for 25-30 minutes.

Step 3 - Filling
1 package instant vanilla pudding mix
1 cup heavy cream

To make filling, whip the cream and make the vanilla pudding separately. Then mix the cream and vanilla pudding gently together, and refridgerate until cold and firm. Let the cake cool down after removing it from the oven. Cut it in half. Spread the filling on top of one half, and cover with the other. Garnish with fruit or berries.

 

Ikea almond Daim cake

 

Mix everything except the chocolate and Daim in a deep saucepan, preferably one with a thick bottom.Cook on low heat until the mixture thickens.Spread the mixture on a greaseproof paper and leave to cool. Add the chopped up Daim chocolate. Melt the chocolate and spread on top of the crunchy.
